Ingredients
For the Chicken Marinade:

1 lb boneless, skinless chicken breast or thighs

3 tbsp olive oil

2 tbsp lemon juice (fresh)

3 cloves garlic, minced

1 tsp dried oregano

1 tsp ground cumin

1/2 tsp smoked paprika

Salt and pepper, to taste

For the Garlic Feta Yogurt Sauce:

1 cup plain Greek yogurt

1/2 cup crumbled feta cheese

2 tbsp olive oil

2 cloves garlic, minced

1 tbsp fresh lemon juice

Salt and pepper, to taste

Fresh parsley, for garnish (optional)

For the Bowl:

1 cup cooked rice or quinoa (or use greens like spinach or arugula for a low-carb option)

1 cup cucumber, diced

1 cup grape tomatoes, halved

1/2 red onion, thinly sliced

Kalamata olives, for garnish (optional)

Fresh dill or parsley, for garnish (optional)

Instructions

Marinate the Chicken:

In a bowl, mix together olive oil, lemon juice, minced garlic, oregano, cumin, smoked paprika, salt, and pepper.

Add the chicken breasts (or thighs) to the marinade, ensuring they are fully coated.

Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Make the Garlic Feta Yogurt Sauce:

In a bowl, combine Greek yogurt, crumbled feta cheese, olive oil, minced garlic, lemon juice, salt, and pepper.

Use a hand blender or regular blender to mix until smooth and creamy. If you prefer a chunkier sauce, pulse just a few times.

Taste and adjust seasoning as needed. Chill in the fridge until ready to serve.

Cook the Chicken:

Preheat your grill, grill pan, or skillet over medium-high heat.

Cook the chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature should reach 165°F / 75°C).

Let the chicken rest for a few minutes before slicing it into strips.

Assemble the Bowl:

Place the cooked rice or quinoa (or greens) at the bottom of your bowl.

Add the sliced chicken on top, followed by the diced cucumber, halved grape tomatoes, and red onion.

Drizzle with the garlic feta yogurt sauce and garnish with Kalamata olives, fresh dill, or parsley if desired.

Serve and Enjoy:

Serve the Greek Chicken Gyro Bowl with extra sauce on the side for dipping or drizzling.

Tips:

Marinate the chicken for at least 30 minutes to allow the flavors to infuse, but longer marination (up to 2 hours) will give the chicken a richer flavor.

Adjust the sauce consistency by adding a little water or extra olive oil if you prefer it thinner.

Make it low-carb by skipping the rice or quinoa and serving the chicken and sauce over a bed of fresh greens.

Use boneless, skinless thighs for a juicier, more flavorful option, but chicken breasts work just as well.

Customize the veggies in the bowl—add red bell peppers, shredded carrots, or avocado for extra flavor and texture.

Meal prep: This dish can be prepped ahead of time by marinating the chicken and storing the sauce in the fridge. Assemble the bowls just before serving.

Variations:

Vegetarian Option: Substitute the chicken with falafel or grilled veggies (like zucchini, mushrooms, or eggplant) for a meatless version.

Greek Salad Gyro Bowl: If you prefer, you can make this a more traditional Greek salad bowl by adding extra veggies like olives, bell peppers, and a dollop of hummus.

Tzatziki Sauce: If you prefer a more traditional gyro sauce, swap out the garlic feta yogurt sauce for a classic tzatziki made with cucumber, dill, garlic, and Greek yogurt.

Correction:
If the garlic feta yogurt sauce feels too tangy for your taste, try reducing the amount of lemon juice or adding a little honey for sweetness. Also, if your chicken isn’t as tender as you’d like, consider using chicken thighs instead of breasts, or marinate the chicken a little longer.

Enjoy!
Dig in and enjoy the vibrant flavors of the Greek Chicken Gyro Bowl with Garlic Feta Yogurt Sauce! Whether you’re craving a refreshing lunch or a hearty dinner, this bowl is a complete meal that’s satisfying and packed with flavor.
