Creamy Mushroom Chicken with Spinach

Ingredients:

 

2 large chicken breasts (boneless, skinless)

Salt and black pepper to taste

1/2 teaspoon garlic powder

1/2 teaspoon paprika

2 tablespoons olive oil

2 tablespoons butter

250 g mushrooms (sliced)

3 cloves garlic (minced)

1 cup heavy cream

1/2 cup chicken broth

1/2 cup grated Parmesan cheese

2 cups fresh spinach

1 teaspoon dried thyme (or Italian seasoning)

Fresh parsley (chopped, for garnish)

 

Instructions:

 

Start by seasoning the chicken breasts with salt, black pepper, garlic powder, and paprika on both sides.

Heat olive oil in a large skillet over medium heat. Add the chicken and cook for about 5–6 minutes per side until golden brown and fully cooked. Remove and set aside.

In the same pan, add butter and let it melt. Add sliced mushrooms and cook for 5–7 minutes until they release moisture and become golden.

Stir in the minced garlic and cook for about 1 minute until fragrant.

Pour in the chicken broth and scrape the bottom of the pan to release all the flavorful bits. Let it simmer for 2–3 minutes.

Add the heavy cream, Parmesan cheese, and thyme. Stir well and let the sauce simmer until it thickens slightly.

Add the spinach and cook until wilted.

Return the chicken breasts to the pan, spoon the sauce over them, and let everything simmer together for 2–3 minutes.

Garnish with chopped parsley and serve hot.

 

Tips:

 

Pound the chicken breasts slightly to ensure even cooking and tenderness.

Do not overcrowd the pan when cooking chicken; this helps achieve a golden crust.

Use fresh Parmesan for better flavor and smoother sauce texture.

If the sauce becomes too thick, add a little extra chicken broth or milk to adjust consistency.

Let the chicken rest a few minutes before serving to keep it juicy.

Replace chicken with turkey cutlets or even salmon for a different protein option.

Add caramelized onions for extra sweetness and depth.

Use coconut cream instead of heavy cream for a dairy-free version.

Include sun-dried tomatoes for a tangy twist.

Add a splash of white wine before the broth for a richer, more complex sauce.

For a low-carb meal, serve over cauliflower rice; for a classic option, pair with pasta, mashed potatoes, or rice.
