Garlic Butter Chicken with Mushrooms

INGREDIENTS

• 500 g chicken breast or boneless thighs, cut into bite-sized pieces

• 250 g fresh mushrooms, sliced

• 4 cloves garlic, finely minced

• 3 tablespoons butter

• 2 tablespoons olive oil

• 1/2 cup chicken broth

• 1/4 cup cream (optional for a richer sauce)

• 1 teaspoon paprika

• 1 teaspoon dried thyme or Italian herbs

• Salt and black pepper to taste

• 1 tablespoon soy sauce (optional, for deeper flavor)

• 1 tablespoon honey or brown sugar (optional, for balance)

• Fresh parsley, chopped (for garnish)

 

INSTRUCTIONS

 

Prepare the chicken by seasoning it with salt, pepper, and paprika. Mix well to coat evenly.

Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook until golden brown on all sides. Remove from the pan and set aside.

In the same pan, melt the butter. Add the sliced mushrooms and cook for about 5–7 minutes until they release their moisture and become golden.

Add the minced garlic and cook for about 1 minute until fragrant. Be careful not to burn it.

Pour in the chicken broth and stir, scraping the bottom of the pan to release all the flavor.

Add soy sauce and honey if using, then return the chicken to the pan. Mix well.

Lower the heat and let everything simmer for 5–8 minutes until the chicken is fully cooked and the sauce thickens.

If you want a creamy version, stir in the cream and cook for an additional 2–3 minutes.

Taste and adjust seasoning with salt and pepper if needed.

Garnish with fresh parsley and serve hot.

 

TIPS

• Do not overcrowd the pan when cooking chicken; this helps it brown instead of steaming.

• Use fresh mushrooms for the best texture and flavor; canned mushrooms can become too soft.

• If the sauce is too thin, let it simmer longer or add a small cornstarch slurry (1 teaspoon cornstarch mixed with water).

• For extra flavor, marinate the chicken for 30 minutes with garlic, soy sauce, and spices before cooking.

• Always cook garlic on medium heat to avoid bitterness.

 

VARIATIONS

• Spicy version: Add chili flakes or a teaspoon of hot sauce for heat.

• Cheesy version: Sprinkle grated mozzarella or parmesan on top and let it melt before serving.

• Low-carb option: Serve with steamed vegetables or cauliflower rice instead of regular rice or pasta.

• Lemon twist: Add a squeeze of fresh lemon juice at the end for brightness.

• Herb-rich version: Use fresh thyme, rosemary, or basil instead of dried herbs for a more aromatic dish.

• Creamy garlic version: Increase the cream and add a bit of cream cheese for a thicker, richer sauce.

 

This dish pairs well with rice, pasta, or crusty bread to soak up the flavorful garlic butter sauce.
