Creamy Garlic Butter Seared Fish

INGREDIENTS
4 white fish fillets (cod, haddock, or tilapia)
3 tbsp butter
1 tbsp olive oil
4 garlic cloves (minced)
1 tsp paprika
1/2 tsp chili flakes (optional)
Salt & black pepper (to taste)
1/2 cup heavy cream
1/3 cup chicken or vegetable broth
1 tbsp lemon juice
1 tbsp chopped fresh parsley
1/4 tsp dried oregano or thyme
INSTRUCTIONS
Pat the fish dry using paper towels. Season both sides with salt, black pepper, paprika, and a little oregano. Dry fish helps create a golden crust.
Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat. Once hot, place the fish gently into the pan. Cook for about 3–4 minutes on each side until golden brown and cooked through. Remove and set aside.
Lower the heat to medium. In the same pan, add the remaining butter and minced garlic. Cook for about 30 seconds until fragrant (be careful not to burn it).
Add chili flakes, then pour in the broth. Let it simmer for 2–3 minutes, scraping the bottom of the pan to release all the flavorful bits.
Stir in the heavy cream and let it cook for another 2–3 minutes until slightly thickened and smooth.
Add lemon juice and taste the sauce. Adjust salt and pepper if needed.
Return the fish to the pan and spoon the creamy garlic sauce over it. Let it simmer for 1–2 minutes so the flavors combine well.
Sprinkle fresh parsley on top and serve immediately.
TIPS
Always use medium-high heat for searing to get that crispy, golden surface.
Do not move the fish too early; let it form a crust before flipping.
If your fish sticks, it may not be ready to flip yet.
Fresh garlic gives a stronger flavor than garlic powder.
For a thicker sauce, let it simmer longer or add a small amount of cornstarch mixed with water.
VARIATIONS
Spicy version: Add extra chili flakes or a dash of hot sauce.
Cheesy version: Stir in grated parmesan cheese at the end for a richer taste.
Healthy option: Replace heavy cream with light cream, milk, or Greek yogurt.
Mediterranean twist: Add olives, sun-dried tomatoes, and basil.
Coconut version: Use coconut milk instead of cream for a slightly sweet, tropical flavor.
Herb upgrade: Try dill, cilantro, or chives instead of parsley for different aromas.
