Creamy Roasted Carrot Soup

INGREDIENTS
6 large carrots, peeled and chopped
1 onion, chopped
3 cloves garlic, minced
2 tablespoons olive oil
3 cups vegetable broth
1/2 cup heavy cream (or coconut milk)
1 teaspoon ground cumin
1/2 teaspoon paprika
Salt and black pepper, to taste
1/2 teaspoon grated ginger (optional)
Fresh herbs (thyme or parsley) for garnish
Optional: a pinch of chili flakes for heat
INSTRUCTIONS
Preheat your oven to 200°C (400°F). Place the carrots on a baking tray, drizzle with olive oil, and season with salt and pepper. Roast for 25–30 minutes until tender and slightly caramelized.
In a large pot, heat a little olive oil over medium heat. Add the chopped onion and cook until soft and translucent (about 5 minutes).
Stir in the garlic and ginger, cooking for 1 minute until fragrant.
Add the roasted carrots to the pot, followed by the vegetable broth. Bring to a gentle boil, then reduce heat and simmer for 10 minutes.
Use a blender (or immersion blender) to puree the soup until smooth and creamy.
Return the soup to low heat and stir in the cream, cumin, and paprika. Adjust seasoning with salt and pepper.
Simmer for another 5 minutes, then remove from heat.
Serve warm, garnished with a swirl of cream, herbs, and a sprinkle of chili flakes.

Roasting the carrots enhances their natural sweetness and gives the soup a deeper flavor.
For extra smooth texture, strain the soup after blending.
Add more broth if the soup is too thick, or simmer longer to thicken.
Use fresh herbs at the end to brighten the dish.
